Easy Tuna Salad
Salads are the key to our summer meals. This took no time and was a big hit.
2 lbs. tuna, grilled rare and sliced
1 lb. of green beans, cut into 1" pieces, blanched
4 pieces of corn grilled and then cut off the cob
2 avocados cut into small pieces
one box of grape tomatoes, cut in half
Dressing: 1 tsp. Dijon mustard, 2 tsp. white balsamic vinegar, 1 tsp. soy sauce, 1 tsp. lemon juice, 1/4 cup and maybe a little more of olive oil. Salt and pepper
Mix it up and serve.
A winner.
