Peanut Butter Blossoms
Peanut butter blossoms are one of my all time favorites. The kids school has a serious policy of no-nuts so it isn't a cookie that I usually keep hanging around. But, what else was I going to do during a snow storm?
2 sticks unsalted butter (room temperature)
1 cup chunky peanut butter (you can use smooth but I like the chunky)
1 cup sugar (plus extra for dipping)
1 cup light brown sugar
3 1/2 cups flour
2 tsp. baking soda
1 tsp. kosher salt
2 eggs
2 tsp. vanilla
2 tbsp. milk ( yes )
60 unwrapped chocolate kisses
Preheat oven to 375.
Sift the flour, baking soda and salt together - set aside. Using a mix master, mix together the butter, and both sugars and peanut butter until completely combined. Let it go for at least a few minutes. Add the eggs, vanilla and milk, mix again. Add the flour over 3 times, mixing each time until combined.
In your hand, create one inch circumference ball, dip it in sugar and coat and then put on a parchment covered baking sheet. Bake for about 6-8 minutes until they are just golden. Take them out, put the chocolate kiss in the center, and then put the cookies back in the oven for about 1 minute, not much more.
Take out, cool. Delicious!
