Cupcakes
Josh and his friend were very focused on baking this weekend.  Vanilla cupcakes were the pick.  Not sure why they chose this but they did.  They dissed me on making the frosting from scratch but were happy to make the cupcakes from scratch.  We found a Martha Stewart recipe.  I'd never seen the ingredients added together like the recipe called for but hey, who am I to question Martha.  We went with it.  They were fantastic.

This makes about 24 cupcakes:

1 3/4 cups cake flour, not self-rising
1 1/4 cups unbleached all-purpose flour
2 cups sugar
1 tablespoon baking powder
3/4 teaspoon salt
1 cup (2 sticks) unsalted butter, cut into 1-inch cubes
4 large eggs
1 cup whole milk
1 teaspoon pure vanilla extract

Heat the oven to 325.  In an electric mixer using a paddle attachment, put both flours, sugar, baking powder and salt in the bowl,  Mix on a low speed until fully incorporated.  Continue on a low speed and start dropping in the pieces of butter, a few at a time letting each of them get mixed in before putting in the next batch.  Otherwise you will find flour all over your face. 

Mix together in a small bowl all the wet ingredients.  Then add in the wet mixture to the dry mixture in 3 parts.  Once everything is mixed in really well, stop.  You don't want to over mix.  Keep in mind, we still have some small lumps of butter in the mixture at the end so no worries.

Pour the mixture about 2/3's of the way up in the cupcake holder.  Bake for about 20 minutes or until a toothpick comes clean when you put it in the cupcake all the way to the bottom.

Let cool and frost.  Yum.
